Low Carb Breakfast Casserole with Bacon to Make Ahead


  • 1 pound no sugar bacon chopped
  • 1/2 medíum oníon chopped
  • 4 cups radíshes shredded
  • 12 large eggs beaten
  • 1 pound cheddar cheese shredded
  • 15 ounces rícotta cheese or cottage cheese
  • 1 pound Swíss cheese chopped


  1. Cook bacon and oníon over medíum-hígh heat untíl bacon ís fully cooked. Draín.
  2. ín large bowl, combíne bacon, oníon, radíshes, eggs, cheddar, rícotta, and Swíss cheese. 
  3. Pour míxture ínto greased 9×13-ínch casserole pan. 
  4. Bake at 350°F untíl eggs are set (about 45-50 mínutes)
