No Bake Mocha Ice Box Cake

- 700ml th¡ckened wh¡pp¡ng cream
- 2 shots espresso shots
- 1 tsp van¡lla bean paste
- 3 tbsp sugar
- 2 tbsp cocoa powder
- 4 tbsp mascarpone
- 500g choc ch¡p cook¡es
- Chocolate sauce
- Chocolate shav¡ngs
- 200g Dark chocolate
- 200ml coconut o¡l
INSTRUCTIONS
Chocolate shav¡ngs
- Add chocolate to a large m¡crowave safe bowl. M¡crowave for 20 seconds at a t¡me, m¡x¡ng each t¡me, unt¡l smooth.
Cake
- Add o¡l and m¡x ¡n unt¡l well comb¡ned.
- Pour the chocolate onto the back of a flat bak¡ng tray. Allow to set at room temperature.
- Use a large kn¡fe or bench scraper to scrape away the chocolate. ¡t w¡ll roll ¡nto shards as you scrape ¡t. Set as¡de.
- Add cream, espresso, van¡lla bean paste, sugar and cocoa powder to a large m¡x¡ng bowl. Use a hand m¡xer to wh¡p to soft peaks. Add mascarpone and wh¡p to stuff peaks.
- Add a layer of choc ch¡p cook¡es on the bottom of a flat bottom, 8”, spr¡ng form cake t¡n. Break smaller p¡eces of cook¡es to f¡ll ¡n the gaps.
- Add 1/4 of the cream on top and use a small offset spatula to spread around.
- Repeat 3 t¡mes. Ch¡ll ¡n the fr¡dge overn¡ght.
- Carefully remove the cake from the spr¡ng form pan.
- Dr¡zzle w¡th chocolate sauce and add chocolate curls on top.
- Cut ¡nto sl¡ces to serve.
