Classic Mac And Cheese (Keto,Low Carb & Gluten Free)

- Cheese Sauce
- 2oz cream cheeseSoftened
- 1/4cup heavy cream
- 1/4cup almond milkother dairy or non-dairy milk works
- 1/4cup Parmesan cheese
- 1cup Shredded cheddarI used mild but you can use any sharpness
- Noodles
- 2bags shirataki noodleslinguine style. Other styles work also. See notes for tips
- 1tsp salt
- 4 cups water
Instructions
- Add 4 cups of water + 1 tsp salt to medium saucepan
- Cut open noodle package and dump noodles into colander over sink to drain
- Add drained noodles to salted water and bring to a boil. Once boiling set timer for 10 minutes
- When 5 minutes is up start making the cheese sauce in separate small saucepan
- In small saucepan combine heavy cream, softened cream cheese, and non dairy milk. Whisk until combined.
