Classic Mac And Cheese (Keto,Low Carb & Gluten Free)


  • Cheese Sauce
  • 2oz cream cheeseSoftened
  • 1/4cup heavy cream
  • 1/4cup almond milkother dairy or non-dairy milk works
  • 1/4cup Parmesan cheese
  • 1cup Shredded cheddarI used mild but you can use any sharpness
  • Noodles
  • 2bags  shirataki noodleslinguine style. Other styles work also. See notes for tips
  • 1tsp salt
  • 4 cups  water
Classic Mac And Cheese (Keto,Low Carb & Gluten Free)


  1. Add 4 cups of water + 1 tsp salt to medium saucepan
  2. Cut open noodle package and dump noodles into colander over sink to drain
  3. Add drained noodles to salted water and bring to a boil. Once boiling set timer for 10 minutes
  4. When 5 minutes is up start making the cheese sauce in separate small saucepan
  5. In small saucepan combine heavy cream, softened cream cheese, and non dairy milk. Whisk until combined.
