NO BAKE CARROT CAKE POPS (PALEO & VEGAN)

There paleo & vegan Carrot Cake Pops are so fun and easy, and require no time in the oven! They are a yummy treat for Spring, but you can make them any time of the year.

Ingredients
Carrot Cake Balls
  • 1/2 cup finely shredded carrots
  • 1/2 cup pitted medjool dates
  • 1/2 cup pecans*
  • 1/3 cup shredded coconut
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp nutmeg
  • 1/8 tsp sea salt
Coconut Butter Glaze
  • 1/4 cup coconut butter melted
  • 1 tbsp coconut oil
  • 1 tsp maple syrup
  • 1/2 tsp vanilla extract
  • Optional: chopped pecans & cinnamon for garnish
Equipment
  • Lollipop sticks
NO BAKE CARROT CAKE POPS (PALEO & VEGAN)

Instructions
  1. Place all ingredients for the carrot cake balls in a food processor, and pulse until ground and a sticky dough forms. 
  2. Grease your hands and roll the dough into 8 even balls.
  3. Place in the freezer for at least 20 minutes so the carrots cake balls harden.
