Cinnamon Swirl Pancakes

INGREDIENTS

  • 100g plain flour
  • 2 tsp baking powder
  • 50g caster sugar
  • 2 egg yolks
  • 115ml milk
  • 2 egg whites


Cinnamon filling:

  • 60g butter at room temperature
  • 100g light brown sugar
  • 2 tsp cinnamon


Cream cheese drizzle:

  • 60g butter
  • 50g cream cheese
  • 75g icing sugar
  • 1/2 tsp vanilla extract

Cinnamon Swirl Pancakes

INSTRUCTIONS

  1. Mix together the egg yolks, flour and sugar, then whisk in the milk slowly, to avoid lumps. Let the batter rest for 30 minutes at room temperature.
  2. Mix together the cinnamon filling ingredients and spoon into a piping bag.
  3. In another bowl, mix together the cream cheese drizzle ingredients and place into another bag.
