- 1 3/4 cups all-purpose gluten free flour
- 3/4 teaspoon xanthan gum (omit if your blend contains it)
- 2 cups granulated sugar
- 3/4 cups cocoa powder*
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon fine sea salt
- 1 cup buttermilk (or 1 cup unsweetened coconut milk + 1 tablespoon white vinegar)
- 1/2 cup avocado oil (or canola oil)
- 2 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 1 cup hot coffee
For the Frosting
- 1 cup butter, softened
- 3 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/4 cup heavy whipping cream
