LOADED VEGGIE SALAD WITH CHICKPEAS AND BLACK BEANS
I'm telling you, this salad is EASY, packed with goodness AND versatile. We eat this solo, as a side or as a topping for chicken. Great for parties, too!

- 15-oz. can black beans, rinsed and drained
- 15-oz. can chickpeas (garbanzo beans), drained
- 15-oz. can diced tomatoes
- 15-oz. can corn, drained
- 4-oz. can diced green chiles
- 1 red onion, chopped
- 1 green bell pepper, seeded and chopped
- 1 jalapeƱo pepper, diced (optional)
- 1/4 cup chopped fresh cilantro
- Juice from 2 limes
- 1/4 cup olive oil
- Salt and pepper, to taste
- Avocado slices, for topping

- Combine all ingredients (minus avocado) in a large bowl. Mix well.
