Hanukkah Donuts
- 1 cup blanched almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol or other sugar-free alternative such as xylitol
- 2 teaspoons baking powder
- 1/8 teaspoon sea salt
- 1/4 cup olive oil plus additional for coating the donuts
- 1/4 cup pure water or nut milk, plus more if needed for consistency
- 3 organic or pastured eggs
- 2 teaspoons vanilla extract
Spiced “Sugar” Topping
- 1/4 cup erythritol or other sugar-free alternative such as xylitol
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon sea salt
Instructions
- Preheat oven to 350 degrees.
- Grease donut pan very well, even if it's non-stick or silicone. Almond flour-based batters are more sticky. Set aside.
- In a mixing bowl, whisk together dry ingredients until completely incorporated. Be sure to break up any lumps of nut flour.
