Easy Instant Pot Recipes for Busy Nights!
1. Instant Pot Olive Garden Chicken
Ingredients
- 3 pounds boneless skinless Chicken Thighs, fresh or thawed (do not use frozen)
- ¼ cup grated Parmesan Cheese
- 16 ounces Olive Garden Italian Dressing (2 cups)
Instructions
- Pour 1 cup Olive Garden Dressing into bottom of Instant Pot.
- Add Chicken Thighs to Instant Pot.
- In medium mixing bowl, stir together remaining 1 cup Olive Garden Dressing and Grated Parmesan Cheese, until well combined.
- Pour Dressing/Cheese mixture over chicken.
- Select “Meat/Stew” setting, select “High Pressure,” and change cooking time to 15 minutes.
- Preheat will start 10 seconds after settings are selected.
- Once Chicken Thighs are done, Quick Release pressure before removing lid.
- Allow to cool for 5 minutes with lid off. Shred chicken with 2 forks or serve as whole thighs!
2. Instant Pot Taco Soup!
Ingredients
- 1 pound Ground Beef
- 14.5 ounces Beef Broth {1 can}
- 15 ounces Kidney Beans {1 can} drained
- 15 ounces Black Beans {1 can} rinsed and drained
- 14.5 ounces Petite Diced Tomatoes + liquid from can (1 can}
- 15 ounces Corn + liquid from can {1 can}
- 10 ounces Original Rotel – Diced Tomatoes & Green Chilies {1 can}
- 1 ounce Hidden Valley Ranch Seasoning Mix packet or 3 tablespoons Homemade Buttermilk Ranch Mix
- 1 ounce Taco Seasoning Mix packet or 3 tablespoons Homemade Taco Seasoning
- 1.5 teaspoon Onion Powder
- ½ teaspoon Salt
- ⅛ teaspoon Cayenne Pepper {optional to add a little heat}
